If you are following me on any of these Blog / Facebook /Twitter / Google+ / Pinterest / Bloglovin / Instagram then you probably know I made homemade ice cream last week. I couldn’t stop posting about it. And I promised I would share it. So, despite the fact that we are in the last week of my 28-Day health challenge, I am going to share. I’m nice like that.
It was awesome. Seriously. Is that bragging? It might be, but I don’t really care because this ice cream is so easy to make, does not require an ice cream maker or machine, and makes you lick your bowl clean.
All you need to make this ice cream are heavy cream, sweetened condensed milk, and then of course the Nutella and raspberries! Diet food…I don’t think so, and probably not the best food to include during my 28-day health challenge, but even those who eat healthy need a treat from time to time, and if you are going to indulge, shouldn’t it be on something amazing? This is totally cheat-worthy, and totally decadent, but only takes 5 minutes to throw together.
Can you believe in just 5 minutes of work you get this? It is creamy, sweet, tasty, and the perfect summer treat.
My Dad used to tell me that anything worthwhile takes work. He was wrong. So wrong. This was eazy peazy! My favorite thing. And now I am ruined for store-bought ice cream. All those years of not knowing how easy it is to make your own that is this awesome. A true pity!
Anyway, now that I am done salivating on my keyboard, and done hyping this ice cream up, and bragging to you, it is time to share the magical ease and goodness!
Day 23: When acting like a cat pays off... & Homemade Raspberry Nutella Swirl Ice Cream
Ingredients
- 1 can sweetened condensed milk
- 2 cups heavy whipping cream
- 1/2- 1 cup Nutella
- 1 cup frozen or fresh raspberries
Instructions
- In a stand mixer, or using a hand mixer, whip the cream until soft peaks form.
- Add in the sweetened condensed milk and whip some more. Whip until stiff peaks form
- Put about half into a bread size pan
- Spoon some of the Nutella in, and using the handle of the spoon, swirl the nutella around
- Add in half the raspberries, and swirl again.
- Fill the rest of the pan, and repeat the process of swirling Nutella and raspberries.
- Drizzle Nutella over the top and sprinkle with raspberries.
- Cover with plastic wrap or foil
- Put in freezer for 6 hours or more

Ok, there are ice crystals on the raspberries, but not the ice cream!
Now that I have shared my secrets and shown you guys that I am not really a culinary genius, rather someone who stumbled upon the world’s easiest ice cream while experimenting in the kitchen (Probably already known to the world, but new to me), I will share the secret of the cryptic title. And no…I am not a crazy cat lady. Today’s little nugget of health wisdom is about stretching.
Have you ever noticed that cats stretch a lot? They arch their backs, and sit back on their hind feet, and stretch. They do this each time they get up, and since cats are often lazy, this is a lot.
So what does that have to do with health? Stretching is great for your health. Each morning when you wake up you should do a series of stretches. Not just arms above the head, but actual stretches, like you are preparing to run a foot race.
Why?
Stretching offers many benefits, including improved digestion and circulation. But my personal favorite is that regular stretching eases back pain, and increased blood flow and energy levels.

Get out of bed and spend just ten minutes stretching. Then reap the benefits of blood flow and digestion all day! And while you are digesting so well, make yourself a pan full of this:
