DESCRIPTION
Masala Sambar (Arachuvitta Sambar)
Ingredients

Toor Dal - 1 cup
Onion - 1 chopped
Tomato - 2 chopped
Turmeric powder - 1/4 tsp
Water
Shallots - 1 cup
Jaggery - 1 tsp
Salt to taste
A few Coriander leaves

For Ground Masala paste
Chana Dal - 1 tsp
Urad Dal - 1 tsp
Raw rice - 1/2 tsp
Coriander seeds - 1 tbsp
Grated Coconut - 2 tbsp
Chilli powder - 2 tsp
Soaked Tamarind - 2 tsp
Water a little

For Tempering
Ghee - 1 tbsp
Urad Dal - 1/4 tsp
Mustard Seeds - 1/4 tsp
Red chilli - 2
Asafoetida powder - 1/4 tsp
A few Curry leaves

Method:
Cooking the Dhal:
1. Add Toor Dhal, Onion, Tomato, Turmeric powder, Water & pressure cook all the ingredients.

Dry roast for masala:
2. Add Channa Dal, Urad Dal, Raw Rice, Coriander seeds & roast them till they start browning then keep them aside.
3. Add grated Coconut & roast it till you get nutty aroma.
4. Mix the roasted ingredients together. Add Chilli powder, soaked Tamarind & grind into fine paste. While grinding add Water.

Making the Sambar
5. Heat Ghee in a pan.
6. Add Urad Dal, Mustard seeds, Red chillies, Asafoetida powder & mix well.
7. Once the Mustard seeds starts crackling, add Shallots, Curry leaves, cooked Dal, ground masala paste, Salt & mix well.
