白素雞玉餃


材料:西洋菜(1斤)、白素雞(1/2包)、餃子皮(1包)
醃料:麻油(適量)、胡椒粉(適量)、糖(1茶匙)、蛋白(1隻)、豆粉(1茶匙)、鹽(1茶匙)
汁料:陳醋(3湯匙)、糖(3茶匙)、麻油(適量)、醬油(1茶匙)
 
做法:
1) 西洋菜灼熟榨乾水份切粒;
2) 白素雞撕成雞絲再切細粒;
3) 把西洋菜粒與白素雞粒混合,加入醃料拌勻成餡料;
4) 將餡料包入餃子皮;
5) 燒滾一煲水,水滾先落餃子;
6) 當水再滾起時加入一碗凍水;
7) 再返滾時再落一碗凍水 ,再返滾時就可把餃子撈起上碟;
8) 把汁料混合便可伴食。

Veggie Dumplings


Ingredients:
Watercress (1catty), White Chicken Substitute (1/2 Pack), Jiaozi wrappers (1Pack)

Seasoning:
Few drops of seasame oil, a dash of pepper, sugar (1tsp), egg white (of 1 egg), green bean powder (1tsp), salt (1tsp)

Dip:
Chinese dark vinegar (3tbsp), sugar (3tsp), few drops of sesame oil, soy sauce (1tsp)
 
Method:
1) Cook watercress in water, then squeeze out the water and chop finely
2) Tear the chicken substitute into shreds then dice
3) To make the filling of the dumplings, mix chopped watercress with the diced chicken substitute then stir in the seasoning
4) Wrap filling with the jiaozi wrappers
5) In a pot, bring water to the boil, then add the dumplings. The boiling will subside temporarily.
6) When the water boils up again, add a bowl of cold water. The boiling will subside a second time.
7) Repeat step 6.
When the water boils up one more time, the dumplings are ready to be fished out.
8) Serve dumplings with the dip.
